Even though I always eat healthy and opt for lighter selections in restaurants, somehow I’m never fond of salads. I’ve always thought – if I want to eat out, might as well indulge :)
But recently, I gave raw veggies a go.
This beautiful blue-green salad is a direct result of my attempt to use the leftover parsley from last time.
With minimum preparation, I’ve built this bowl of morning-dew freshness! :) It’s so simple that I decided to share with you how you can whip it up yourself in no time. Here’s a sweet way to banish hunger strikes immediately:
Ingredients: (Makes 2 servings)
3 small dragonfruits, chopped into 1/2-inch pieces
1 handful blueberries
1 handful raisins
1/2 c fresh parsley, chopped
1/2 c fresh cucumber, chopped
1 lime, cut into halves
1 tbsp apple cider vinegar
1 tbsp honey
Combine dragonfruits, blueberries, raisins, parsley and cucumber into a large bowl. Mix well.
Pour apple cider vinegar and honey into the bowl. Stir until blend.
Enjoy to the very last bite. :)
