Black Bean Soup

Hearty and nutty flavors, combined with oriental scents

 

 

 

Ingredients:
1 c black beans, soaked overnight
4 oz. enoki mushroom stalks

2 small handfuls dried anchovies
12 pitted red dates
6 small pieces dried Chinese wild yams

1 celery stalk, chopped into little pieces
1/2 c onion, chopped into big chunks

6 c water
2 tsp salt

 

 

 

 

 
Preparation:

Combine all ingredients in a large pot and bring to boil for 1 minute. Stir while it’s boiling.
Lower heat to simmer for at least 1 hour.
10 minutes before serving, add salt to stir for one minute, then simmer.

  2. That’s a really interesting recipe … I don’t have the dates but I do have dried anchovies. Maybe Goji berries might work?

Thanks :) Yes goji berries are fine, these dried fruits are meant to give the soup a little bit of sweet scent.. and if you happen to come across any Asian grocery store, just in case, this is how the dried red dates look like, and they’re usually already pitted (http://staciapriscilla.files.wordpress.com/2012/07/553084_10101631344788898_2090765468_n.jpg)

      I can assure you that you 100% that you can find it in Chinatown :)
