1 c black beans, soaked overnight
4 oz. enoki mushroom stalks
2 small handfuls dried anchovies
12 pitted red dates
6 small pieces dried Chinese wild yams
1 celery stalk, chopped into little pieces
1/2 c onion, chopped into big chunks
6 c water
2 tsp salt
Combine all ingredients in a large pot and bring to boil for 1 minute. Stir while it’s boiling.
Lower heat to simmer for at least 1 hour.
10 minutes before serving, add salt to stir for one minute, then simmer.
