Last night, I made this super easy pasta for our dinner, which only took me roughly 20 minutes to prepare.
It’s amazing how much fiber and fats (the good kinds, of course) avocado contains, so much so that a few gulps of this dish fills our bellies up quickly.
For cheese lovers like Stanley and myself, sprinkle extra helpings of Parmesan cheese, lest your body runs out of fat :D

Ingredients: (Makes 2 servings)
1 ripe avocado, pitted and peeled
2 garlic cloves, minced
2 tbsp olive oil
2 tsp salt
8 oz. angel hair pasta (fettucini and linguine are also great pasta options)
1/2 c water
1 tbsp salt
Bring spaghetti to salted boiling water and stir. Cook for 10 to 15 minutes. Transfer cooked pasta to separate bowls to serve. Reserve water.
In a food processor, process avocado, olive oil, garlic cloves, and salt until consistency is smooth and creamy. Toss avocado sauce with cooked pasta. Add pasta cooking water and Parmesan cheese until everything blends together.
Sprinkle paprika and black pepper to serve.
